Tomato / Veggie Juice

I don’t know about you but I always seem to have a random assortment of vegetables in my fridge that are in dire need of being used before they go bad :-). Today when I went to pull out the lunch items from the fridge I decided to quickly clean out the old items and organize. This brings me to the produce drawers were I found an excess of tomatoes, celery & my large supply of green peppers I had been planning on freezing but had not yet made it to the freezer. As my family does not eat as many vegetables by themselves (we tend to eat a lot of fruit by themselves for snacks) it is not uncommon to end up with random veggies that are not being used but I don’t like letting them go to waste.

Today I decided to turn some of the excess veggies into Juice that could be frozen for using later in soups. Using my blendtech blender I put 3 large tomatoes quartered, 1/4 cup of water, 1/4 onion, 1 stalk of celery, and 1/4 cup of ice in for each batch.  40 seconds later I had about 3 1/2 cups of smooth fresh tomato / veggie juice! I had enough tomatoes to make 3 batches of juice. I will store this juice in ziplock containers in the freezer until I am ready to use them.

What do you do with extra veggies? I would love to hear your ideas!

    I give them to you so you can show me what I should have done with them. :) Gunna gave to get one of those nifty blenders first though!

      yes, I was actually thinking about this as I was blending them up as about half the tomatoes came from your house :-). I actually was thinking that one of the jars of juice would head your way.
