No-Fuss Potato Soup

This is one of my new favorite recipes and will be dinner for tonight :-) I got the recipe from my Taste of Home’s Slow Cooker Favorites Book (which happens to be my FAVORITE slow cooker book!!)

No-Fuss Potato Soup

6 cups cubed potato’s (you can peel them, I don’t)

5 cups water

2 cups chopped onion

1/2 cup chopped celery

1/2 cup sliced carrots

1/4 cup butter

4 teaspoons chicken bouillon

2 teaspoons salt

1/4 teaspoon pepper

1 can evaporated milk (12oz)

3 Tablespoons chopped fresh parsley (I have made it without this and it turns out fine)

Snipped chives, optional

In a large Slow Cooker, combine the first nine ingredients. Cover and cook on high for 7-8 hours or until the vegetables are tender. Add milk and parsley; mix well. Cover and cook 30-60 minutes or until heated through. Garnish with chives if desired. Yield: 8-10 Servings (about 3 quarts)

Menu Plan Monday 10-24-10

It’s Monday!!! I don’t know about you but in my life the weeks are flying by! It is hard to believe that we are already almost at the end of October and that Halloween is only days away!

As far as menu planning goes I am pretty proud of myself as we have been doing pretty good at sticking with my menu’s. This week looks as if it will be somewhat laid back. We will have a couple evenings out of the house but hopefully with either slow cooking  during the day or using freezer meals we will get through those days smoothly.

Our Menu for this week is:

Monday: Cereal, juice / Caesar Salad with Chicken / Chili & Cornbread

Tuesday: Toast, fruit / Freezer Dinner

Wednesday: Oatmeal, Fruit / Open Faced Sandwiches, Fruit / Whole Chicken,
