Menu Plans for the week

Hope everyone had a GREAT weekend!! Ours was good but bus and went way too fast!! Anyways I am trying to get back into routine this morning. As for meals this week we are on week 3 of our paleo journey and it is going good so far…I think I said before I am sticking with it 100% at home (as this is were the majority of our meals/ snacks are consumed) but when we are out and about I am being more lenient at this point.

So here’s the menu for this week…

Sunday – We had Caprese Oven Omelet

Monday – We eat at Home Group on Monday – this would be one of those lenient times :-)

Tuesday – Chili & Salad

Wednesday – Gumbo

Thursday – Paleo Orange Chicken & Broccoli

Friday – Seafood Night – Halibut for Brian and Tilapia for the

Paleo Pizza Bites

While menu planning for this week I came across this recipe. Now my family LOVES pizza especially homemade pizza so this seemed like a fun alternative to the pizza crust version :D. I used this recipe and then picked out our families favorite toppings…Pineapple, ham, olives all cut into mini size pieces.

For fun Paleo Pizza Bites you will need:

Pepperoni – I would recommend looking around to find some larger pepperoni slices. We had some packages of your typical pizza topping pepperoni in the freezer so we used it but they were literally bite sized (maybe even half a bit size) and in order to feel like you got a pizza serving you needed 20 or so of them (at least!!)

Pizza Sauce

Menu Plan Monday 7/18/11

Happy Monday Everyone!!! I know for most of you Monday is the first day back to work…At our house Monday is day #2 of the weekend so we are enjoying getting some things done and hanging out as a family :-).

As for menu’s last week was AWESOME!! I finally after lots of debating and contemplating the issue (funny how I am always telling my kids the phrase “I Can’t” is not allowed and yet I have spent so many weeks going saying “I Can’t start the Paleo Diet this week because….”) decided to take the plunge and planned a complete week’s worth of meals that consisted of whole foods and were Grain, Sugar and mostly Dairy Free. The week went great! The meals were all tasty, filling, healthy and made me feel good about feeding them to my family :-).  I even bought some Almond flour towards the
