Recipe Review: Cinderella Pumpkin Bowl with Veggie & Sausage Soup

As promised I am giving a review on the Cinderella Pumpkin Bowl with Vegetable & Sausage Soup. Overall this was a good soup and a neat idea! However, my family was not a huge fan of the soup as it was mainly vegetables (parsnips, red pepper, green pepper, carrots, parsley, onion, broccoli, zucchini). If I was to make it again I think I would add more meat and cut back to just a few types of vegetables, I think I would also add some rice or barley. The other change I would make is to use several small pumpkins as one of the comments on the recipe suggested instead of the large Cinderella pumpkin. I found that while it looked really neat the large pumpkin was hard to handle when it was cooked and full of a hot liquid soup. Unfortunately ours ended up with the side splitting and juice spilling out…resulting in a quick move to a large bowl. So while this recipe did not work out for me exactly as I had planned it has inspired me to possibly try cooking other soups in pumpkins or squash.
