Weekly Menu – Grain Free and Using Produce from Bountiful Baskets

I think Saturday mornings are one of my FAVORITE mornings of the week as I get to pick up our Bountiful Baskets produce basket! It is always fun to see what we get! This week we got Bananas, Apples, Apricots, Plums, Pineapple, Figs, Spinach, Cauliflower, Broccoli, and Tomatoes! Along with picking up my produce basket on Saturdays I also try to menu plan for the week so I can plan to take advantage of all the fresh produce we have.

I am really excited about my menu for this week as it uses all my vegetables from the produce basket (fruits are always used up very easily for snacks or desserts at our house) and for the most part follows a grain free / sugar free theme!! Going grain free / sugar free has been something I have been striving to do for awhile and yet struggle with coming up with the recipes that my family will eat and will fit in our budget. My ultimate goal for my family is to follow a Paleo style (I say style because we are going for a modified version to start with atleast :D) grain free / sugar free diet as I know from research and past experience that it would lead to lots of health benefits. If you want additional information on why a grain free lifestyle here is a good blog post on it. Of course going grain free is not something that everyone feels is necessary or even wants to attempt but hopefully regardless you will enjoy my menu for the week and maybe try a few of the recipes (these are some of our favorites!!). You will notice that I am using alot of recipes form the Wellness Mama blog…I LOVE her recipes and find that she does a good job of providing easy to read information!

Our Menu for the Week

Breakfasts – Protein Smoothies (we have been making ones with frozen fruit, bananas, honey, soy milk and protein drink mix)

Lunches – We will be eating leftovers from the night before

Snacks – Fruit from our produce basket or Energy Bars

Desserts – Fruit, Icecream (we make our own in our blender with soy milk, honey flavoring such as vanilla and ice)


Sunday – Gumbo

Monday – We usually have Home Group on Mondays so we do not eat at home.

Tuesday – Sausage Stuffed Winter Squash with Spinach Salad

Wednesday – Honey Mustard Chicken (this is my own recipe so I will try and post on it later) with Cauliflower rice and spinach salad

Thursday – Cheesy Chicken and Broccoli Casserole

Friday – Beef Burgundy (My Husbands Mom’s recipe) with Salad

Saturday – Leftover Buffet :-)

    I was just researching the Paleo diet this last week and it sounds difficult but I can see the many benefits. Excited to see what you come up with each week as you move more in that direction:)

      Chrystal, I am really excited about moving forward with the paleo diet!! So far this week has been great…at least as far as the food we eat at home. It is recommended that if you are going to go paleo that you stick with the guidelines 100% for at least 30 days. In the past I have made diet changes at home (as that is where we get the majority of our meals) but then allowed exceptions when out and about. That is how I am looking at this as well at least for the time being :-)
