Menu Plan Monday 7/18/11

Happy Monday Everyone!!! I know for most of you Monday is the first day back to work…At our house Monday is day #2 of the weekend so we are enjoying getting some things done and hanging out as a family :-).

As for menu’s last week was AWESOME!! I finally after lots of debating and contemplating the issue (funny how I am always telling my kids the phrase “I Can’t” is not allowed and yet I have spent so many weeks going saying “I Can’t start the Paleo Diet this week because….”) decided to take the plunge and planned a complete week’s worth of meals that consisted of whole foods and were Grain, Sugar and mostly Dairy Free. The week went great! The meals were all tasty, filling, healthy and made me feel good about feeding them to my family :-).  I even bought some Almond flour towards the end of the week and did a little baking which also turned out great! I will most likely do some paleo baking posts soon but to give a preview…I tried biscuits (definitely different but still tasted great), Banana Muffins (yummy) and a Berry Cobbler (also good, though I think we will be working on that recipe a bit :D). My next baking adventure is going to be a flax seed bread…really excited about it!

Ok, so what’s on the menu for week 2 of our Paleo Adventure???

Sunday – We had Paleo Pizza Bites – Post coming soon 😀

Monday – Home Group ~ we will not be eating at home

Tuesday – Butternut Lasagna & Salad

Wednesday – Caveman Chili & Salad

Thursday – Steak, Broccoli & Fries (k, the fries are not really paleo friendly but we need to use up some potatoes and at least they will be homemade fries that are baked :D)

Friday – Fajita Salad

Saturday – Leftover Night


Breakfasts will once again be smoothies

Lunch – we will be eating leftovers

Snacks – Homemade Energy Bars, Fruit (plums, nectarines, bananas, mango, melon)
