Menu Plan Monday 4/7/11

This week I am somewhat cheating on my Menu Planning. I decided to cut back on the amount of grains we are eating in our diet as it seems that has become the base for alot of our meals and I would like to focus more on fruits, vegetables & proteins. With this in mind I have decided to copy a weeks worth of meal ideas from www.wellnessmama.com. Wellness Mama promotes grain free living and while I am not planning on going completely grain free I love the idea of using more veggies in our diet (this is a area I somewhat struggle with as in the past vegetables have been primarily a snack food or maybe a side dish but not an active participant in the main course). I also LOVE the idea of trying new recipes!! We seem to get stuck in a rut and repeat the same meals week after week.

So with that being said here is my menu’s for this week:

Sunday: Cajun Gumbo Jumbalaya

Monday:Cheesy Chicken and Broccoli Casserole

Tuesday: Homemade Tuna and Apple Salad with Walnuts

Wednesday: Boeuf Bourguignon (Beef Burgundy) with salad

Thursday: Chinese Chicken and Cabbage Stir Fry

Friday: Skillet Steak with Sweet Potato or Butternut Latkes and Roasted Vegetables of Choice

Saturday: Leftovers

Breakfast will consist of: Oatmeal & Fruit

Lunches will be: Leftovers, Salads and Sandwiches with lots of fruits & veggies on the side
