It's Monday

It’s Monday and I once again have high expectations of what I should be able to accomplish this week. I would like to get my house cleaned completely, organize the baby clothes that are sitting in boxes (we are in between 3-6 month and 6-9 month sizes leaving hence the boxes as we try to pack away the smaller ones and unpack the larger ones), find a spot for the boxes of my older kids clothes (we have gone through their drawers and packed away the unused items for either a younger child or another season), and the list goes on…

When it comes to food for this week my goal is to stick to my menu plans and avoid eating out. I have found that as we have gotten more busy we have fell into the trap of picking up fast food while running between activities and stopping at coffee shops for a quick pick me up. So I have thought it through and am trying several things to curb the extra spending on fast food.

1. I have started cooking in our roaster oven again…this allows me to cook enough for us and the daycare plus put away 3-4 freezer meals for days when I don’t have time to cook a dinner.

2. I picked up some ziplock containers that are freezer / microwave safe these will be used to put away single serving size portions in the freezer for when someone is looking for a quick lunch or we need a fast dinner but don’t want to pull out a whole meal. This will also keep us from wasting the last serving or two of a meal that may otherwise sit in the fridge and not get eaten.

3. We have stocked up on coffee making supplies so that we are not tempted to stop and buy coffee as we can make it at home.

4. I am going to work on making some fruit breads and cookies that can be frozen in individual servings so we have food to grab on the go for snacks in the car.

Ok enough of my plans here is my menu for the week:

Monday

Breakfast: Oatmeal, fruit, milk

Lunch: Sandwiches, fruit

Dinner: Taco Salad

Tuesday

Breakfast: Muffins

Lunch: Taco Salad

Dinner: Potato Soup (this will make some freezer meals as well)

Wednesday

Breakfast: Cereal, juice, milk

Lunch: Potato Soup, Biscuits

Dinner: Broccoli and Chicken Casserole, Cauliflower

Thursday

Breakfast: Pancakes

Lunch: Broccoli, cauliflower and chicken casserole

Dinner: Bean Soup (this is a freezer meal that I already have in the freezer so I will just re-heat it)

Friday

Breakfast: Cereal, Fruit, Milk

Lunch: Bean Soup, Biscuits

Dinner: Whole Chickens, Corn on the Cob, Mashed Potatoes & Cauliflower ( I will save the chicken bones and use them on Saturday for chicken noodle soup)

Saturday

Dinner – Chicken Noodle Soup (this will also make some freezer meals)

    It all sound very good! :) I am looking forward to Friday night… yum! Taco salad sounds good for tonight too!
